Lime and Vodka Truffles
These truffles look beautiful and elegant with a fresh piece of lime on the top. They tasted really good without the hazelnuts so we’ve kept them for a later baking session so there’s no wastage!
You will need:
Use the recipe card from the kit, follow step one to melt the milk truffle filling in the microwave for 30 seconds. Then add the lime juice and vodka to the truffle filling and stir until combined.
Pour the filling into the piping bag and follow step 2 to fill the truffle shells. Put them in the fridge to set for 30 minutes.
After 30 minutes follow step 3 of the recipe card and melt the chocolate buttons. Instead of rolling the truffles in the hazelnuts we had some fun and hand rolled them to get the swirl effect you see in the picture. To do this, take some of the melted chocolate in your hand and roll the truffle around to coat it fully. You can use gloves if you wish or use your hands (this will be a bit messy!). Put the truffles on the parchment paper to set.
Decorating your truffles
If you’re serving the truffles straight away you can add a thin piece of lime to the top of the truffle before the chocolate sets. Take a vegetable peeler and slice a piece of the lime rind then cut this piece into thin slivers with a knife.
Alternatively keep a little bit of the melted chocolate back and when you’re ready to serve you can melt the chocolate again slowly, for 5 second blasts until it’s fully melted, add a little bit of the chocolate to the top of each truffle then add the sliver of lime.
